These look like they are using the a Qprox capacitance sensor. The entire PCB and layout for these boards along with BOMs can found in the documentation. Check into:

I've looked into the Quantum ones before, and these seem cool. Thing is, they are digital, how to hook these up in place of a regular old analog potenohmeter? Theres got to be an easy way???? There some out there that even light up under them so know what level its at, but damn if I could ever get it all figured out.
